It’s an early spring day in northern New Mexico and we are all searching for something interesting to cook for dinner. This is a repost that has had countless shares, so I know you’re going to love it.

If you’re looking for something delicious, simple and easy to make for dinner, I found it .And then I made it a few nights ago. I guess it was my unintentional meatless Monday meal.

Chile Relleno Quiche

I ventured out of the house yesterday after hours of watching it snow, and I eventually ended up in my mother’s very warm inviting kitchen, drinking coffee. There was a new dish on her stove, a pie pan of something looking suspiciously green chile-ish. “What’s that, and may I have it for lunch?” I asked. “Eat it all,” she said, “your Dad and I had all we wanted earlier.”

So I dug in. And I immediately had to have the recipe. It’s so simple you’re going to want to make it tonight.

Layer a pie pan with roasted and peeled (or canned) green chiles. Grate a layer of your favorite cheese over that. Repeat the layers. In a bowl, mix four eggs with 1/2 cup of milk and whatever seasonings you like. I used freshly ground pepper and some garlic salt. My mom just uses salt and pepper.

Bake at 350 for 35 minutes, or until a toothpick poked in the center comes out clean.

Serve. This is great with potato soup, which was the other dish on my table last night. I’d also suggest beans and cornbread, another favorite meatless meal.
