Quelites (spinach with pinto beans) is a side dish that’s easy, loaded with protein and delicious. It’s one of those dishes that I forget to make, and then when I see the recipe, I smack my head, V-8 commercial style, and say, “why didn’t I think of quelites?” Lots of folks make it with just a sprinkling of red chile powder or flakes, but it’s so much better with some chopped green chile. . .but what isn’t?
Quelites (Spinach with Beans)
1/2 onion chopped and sauteed in olive oil along with at least 1 clove garlic (or bacon drippings)
1 1/2 cup prepared pinto beans
1/4 cup chopped green chile
Salt to taste
1 1/2 lbs cooked fresh spinach (frozen or canned can be substituted)
Cook the spinach, drain, and chop. Saute the onion in the oil until soft. Add the other ingredients and continue to saute for 5 to 10 minutes.
